Not only are puff pastries the most delicate of all small, savory pastries, they are practical, too. They lend themselves well to advance preparation. They may be frozen formed and unbaked, and baked on the day they are served. Some of the pastries here, such as the cheese straws and cheese palmiers, may be frozen after they are baked and then reheated before serving.
