The far left column of the sample Baking Chart includes oven times and temperatures for two different types of ovens. The top row the chart labeled Deck refers to the ovens found in professional bakeries, restaurants, and culinary schools. Inside a deck oven there are no moveable shelves so the distance between the breads and the ceiling of the oven chamber is fixed. Depending on the manufacturer, the chamber height ranges from 7 to 10 inches. Pizza ovens, like the kind you find at most neighborhood pizzerias, are shorter versions of the deck oven with heights from 6 to 8 inches.
