Some Useful Substitutions for Emergencies

1 cup /7.6 ounces/217 grams light brown sugar 1 cup /7 ounces/200 grams granulated sugar plus 1 tablespoon/15 ml/0.7 ounce/20 grams light molasses
1 cup /8.4 ounces/239 grams dark brown sugar 1 cup /7 ounces/200 grams granulated sugar plus 2 tablespoons/30 ml/1.4 ounces/40 grams light molasses
1 pound unsalted butter 1 pound lightly salted butter. Remove 1 teaspoon/6 grams salt from the recipe.
