The Ankarsrum Assistent is the Rolls-Royce of mixers for bread dough. Its design is based on the spiral type mixers used in professional bread-baking kitchens, which are designed to mix dough with the least incorporation of air (referred to as oxygenating), which would decrease flavor. This beautifully designed 7.4 quart mixer can handle from one up to about eight loaves (1 to 12 pounds of dough using 4 to 23 cups of flour). The mixer comes with a sturdy stainless-steel bowl that rotates when the machine is turned on. It is equipped with a metal dough hook for larger amounts of dough, and a large plastic roller with grooves designed to simulate the action of fingers for kneading smaller amounts of dough. Both devices move back and forth as the bowl circles around. A detachable plastic scraper effectively scrapes the sides of the bowl as it mixes.
