Frying chicken—or anything else—takes goodquality oil, lots of space, and a deep vessel. Given that, and a little bit of practice, it can become routine and almost effortless.

I like fried chicken from the American South, but I don’t think it can touch any of the following recipes, which have a ton more flavor.
