Always break off the bottom, woody part of asparagus stalks. They usually snap off at about the right place, or you can use a knife. As for peeling, pencil-thin asparagus don’t need it, but with all others, use an ordinary vegetable peeler to remove the outer skin from the base of the flower to the bottom of the stalk.
