A couple of words about cucumbers, which also appear in the salad (and even soup) chapter: In almost every case, smaller and thinner is better. Look for Japanese hybrids, firm Kirbys, and any other variety that contains a minimum of seeds. If you are forced to use a heavily seeded cucumber, it’s almost always worth splitting it in half and scooping the seeds out with a spoon.
