Purple-sprouting broccoli is so much more versatile than ordinary broccoli, which is far too common both in and out of its natural season for my liking. Of course you can serve purple-sprouting as a vegetable in the same way, but in addition, you’ll find it is delicious served with hollandaise, or drizzled with olive oil and topped with shavings of pecorino or Parmesan, or simply tossed in melted butter - as you might asparagus. Sprouting broccoli makes a great fresh-tasting puréed soup. It’s also perfect for dipping into a classic cheese fondue, as the flowery heads retain the sauce well.
