The great thing with mackerel is that they are cheap, tasty and need little doing to them - perfect for a barbecue, as a squeeze of lemon, good bread and a simple tomato or leafy salad is all you’ll need. They respond well to baking and grilling, too. And when really fresh, mackerel makes top-notch sashimi - these days a sharp knife, soy and wasabi go into my tackle bag when I’m fishing for them. As they’re probably the easiest of all fish to catch, you might well end up with too many for supper. Panic not though, you can souse your excess catch to make it last a week, or just surprise your neighbours with a fishy gift.
