Elderflowers normally start appearing in mid-June, depending on the part of the country in which you live. Like seashore vegetables, they are food for free - just waiting to be picked. It’s a great excuse to get the kids out into the countryside and learn that they can gather food for free. It’s also important to give them a healthy, natural drinking option that is not full of chemicals.
A few bottles of simple, strong elderflower syrup made at the height of the season should last you through the year - to use as a base for a refreshing cordial, cocktail or elderflower Champagne.
