Given to me by the late Ted Renolds (Senior Lecturer in Catering at The Scottish Hotel School, also joint author of the Chef’s Compendium) who found it among some second-hand books at the Glasgow ‘Barras’. The library catalogue suggests it dates from the early eighteenth century.
