I have made a conscious decision to use the same ingredients in many of the recipes, so that you won’t need a pantry filled with fancy items to be able to cook from the book. Also, you will be able to minimise waste, as a couple of pounds of carrots, for example, will lend themselves well to several of the recipes. I also love using roots, shoots, tops and all of the veggies – leek tops, cauliflower leaves, the lot! I have made sure that the recipes are simple and easy to follow, so you don’t spend too much time planning or preparing meals.
