I was bit by the sous vide bug late in 2014. That Christmas morning, I unwrapped a package from my mother-in-law to find a Sansaire immersion circulator. I had heard about sous vide but didn’t know much about it – but as someone who loved to cook from a young age, I was always happy to play around with new gadgets. Two nights later I cooked my first steak and I was hooked. I still say that’s the best gift anyone has ever bought for me (much to my wife’s playful annoyance). Little did I know how life-changing it truly would become.
