Chefs talk a lot about attitude and rightly so. It is the number one characteristic they look at in potential recruits. How will this young person behave in my kitchen and do they really want to learn?
Once upon a time job adverts for chefs routinely mentioned the qualifications that applicants needed to have to be considered. These were the days of the 706/1 and 706/2. Those older qualifications have long been replaced by the NVQ and more. However, the latest qualifications are not essential in kitchen job applications any more. They can demonstrate how much an applicant has learnt but they can be trumped by any candidate with the right attitude. A good attitude has become the number one qualification for any young chef.
