Some of the best food I have eaten around the world has come from the humblest of kitchens or street stalls, where flavours have been conjured up with relatively few utensils. So, I truly believe that incredible food can come from the most basic set ups. In the West, we tend to fill our kitchens with many gadgets that we seldom use. While pressure cookers are sometimes used in India to make dals and some curries, in the West they are not so commonly used so I have not included them in this section or used them to make any recipes in this book. The list below is what I use to cook all the dishes in this book on a regular basis. I have not included chopping boards and stirring spoons but it goes without saying that you will need these too.
