Eastern China comprises the huge metropolis of Shanghai, and the surrounding provinces of Jiangsu, Anhui, Zhejiang, Fujian and Jiangxi. The most notable feature of the region is the Yangtze River Delta, and water is the predominant element of the landscape. This area is largely low-lying, with ancient irrigated rice fields traversed by a vast network of canals, many of which date back centuries. Jiangsu, Shanghai, Fujian and Zhejiang all share a coastal position, meaning that the sea also plays a huge part in the culinary culture.
