From the bustling market stalls of Hong Kong to rural kitchens in the outlying villages of the province, the people of southern China share a passion for their food. Differentiated from the rest of the country by its maritime climate and close trading links with the outside world, the area is divided into four gastronomic subdivisions: Hainan Island, Hong Kong, Guangdong, and Shantou, a town within Guangdong Province. Each of these has signature dishes, which reflect the cooking techniques and ingredients particular to that place.
