Indian cooking is complex, eclectic, and evolving. It involves several culinary influences folded in one, making the cuisine fascinating and richly nuanced. Regional influences in India are shaped both by the topography and the culture. It is inherently a very sustainable and eco-friendly cuisine, and many foods and techniques have evolved around what is readily available in the region. Indian restaurants often present dishes as a uniform amalgamated cuisine, but this is far from true. For example, I am from Eastern India while my husband is North Indian, and our culinary heritages have distinct differences.
