Legumes/dals/lentils/pulses round out offerings on the Indian table. There are countless varieties of legumes that provide much-needed, comforting protein in a largely vegetarian diet. These legumes are usually grouped in the general category of dal. While there is no one variety of dal, it is a broad enough food group to have some very basic and general rules, which I cover in my Indian Legumes Primer. Other than providing a good source of protein and essential amino acids, legumes offer a wealth of dietary fiber, vitamins, and minerals, and are an excellent source of iron.
