Indian desserts are notoriously laborious and time-consuming but often well worth the effort. I personally am of the belief that a good Indian meal is incomplete without some masala chai and a touch of sweetness. To this end, this chapter offers you some of the essential Indian dessert recipes. Some of the features of the Instant Pot®, such as the consistent high heat and the fermentation and steaming features work very well for several of the Indian desserts. Indian puddings such as a halwa and kheer all can be cooked quite easily in the Instant Pot®. In fact, many Indian households have been doing these successfully in the pressure cooker for years. In selecting the recipes for this chapter, however, my intent was to offer you an assortment of techniques that can be adapted or diversified for other desserts.
