  1. A teaspoon is always a level teaspoon.
  2. A tablespoon is always a level tablespoon.
  3. Some of the recipes, notably in the puddings section, are indicated gluten free. At home we have a particular interest in cooking with non-gluten flours (rice, chickpea, maize, potato) as our daughter is a coeliac, and therefore has an intolerance to gluten. In practice we have found that many of the recipes which indicate wheatflour can quite successfully work with an alternative; I have given recipes which either work better with the alternative, or where there is no discernible difference in result should you wish to use a flour other than wheat.
  4. All recipes are for four, unless otherwise stated.
  5. All eggs are medium, unless otherwise stated.
