Sandwiches: where would we be without them?! They really are the most convenient way to make, and eat, a quick snack, and vegan varieties can be very delicious as well as healthy. One of the secrets to a good sandwich is to use nicely soft and springy bread (white and/or brown) then, unless the filling does not require it, I like to spread the bread with my Vegan Butter and top with a generous amount of delicious filling. As a change from sandwiches, crostini are lovely, too: perhaps not as practical to transport and eat, but so pretty and tempting, and quick to assemble once you’ve made the bases, which can be done in advance, as described.
