These well-known Japanese dishes are much enjoyed in the West. Sushi is based on vinegared rice rolled in seaweed, with strips of raw fish or a vegetable such as cucumber or avocado hidden in the centre. Sashimi is simply very fresh raw fish, served with a horseradish paste called wasabi. Both are exquisitely presented, and are eaten with chopsticks.
