Brown Sauces

Generally served with roast meat or game, the basis of any brown sauce is a good homemade brown beef or veal stock; for a rich colour and flavour, this is absolutely essential. A variety of flavouring ingredients, such as finely chopped vegetables, Worcestershire sauce, wine, mustard and tomato purée, can enhance the basic recipe.
