There are many versions of the omelette, with perhaps the most typical being the savoury French omelette, made from lightly beaten eggs that are cooked in a frying pan until just firm. Some omelettes are folded around fillings such as cheese or ham; others are flavoured with herbs, cooked spinach or bacon mixed into the raw eggs. A tortilla, or Spanish omelette, is a thick omelette of potato, onion and often garlic. A frittata, or Italian omelette, is cooked on both sides, and often eaten as a snack or antipasto.
