Although chicken was once a dish available only to the wealthy, food has long been a route to people’s hearts. In his coronation speech of 1594, France’s Henry IV courted favour by promising every peasant of the land ‘a chicken in his pot every Sunday’. Since then, the Sunday roast chicken has become probably the most popular family meal of them all.
