There is an old saying about pork: ‘every bit of the pig can be used except the squeal’. Pigs have been widely farmed for centuries and are eaten in many countries of the world. Pork can be eaten both fresh, as chops, cutlets, steaks, or cured into bacon, ham, salami and sausages. The meat takes on the flavour of the pig’s diet (and pigs can be surprisingly choosy). For example, the Iberian jamon that has become so popular in recent years is produced from the Spanish pata negra pigs that have been fed on wild acorns.
