Sushi takes on many shapes and forms. One of the most popular is sushi rolls, or maki sushi, of which there are countless variations. These are made using a square of nori, spread with rice and topped with a filling such as fish, cucumber or pickles. Using a bamboo mat, the rice is rolled up into a cylinder and sliced into little rolls. This type of sushi can also be rolled by hand into a cone, in which case it is usually called temaki. Nigiri sushi consists of a pillow of rice smeared with wasabi, usually topped with a slice of raw fish or other seafood, sometimes wrapped with a thin strip of nori seaweed.
