Mussels are bivalve molluscs that grow in the sea in clusters around sandbanks and rocks. A mussel holds onto rock with its byssus (beard), a mass of long silky threads found at the opening of the shell. Mussels are sold live in their shells, or the flesh can have been removed and preserved in sauce or brine.
