Prawns can be steamed, boiled, fried, grilled or baked. They can be made into mousses, sauces and stuffings and can be served as salads and hors d’oeuvres. Whichever way they are cooked, they should not be overcooked or they will become tough and rubbery; 2–3 minutes is sufficient to cook medium-sized prawns. If adding cooked prawns to a dish, add them at the last minute or they will be tough.
