These large crustaceans are found in cold waters and are prized by seafood lovers the world over for their firm, delicate and slightly sweet flesh. True lobsters have eight legs and two large front pincers, which distinguish them from rock lobsters, or crayfish, which have no pincers and are found in warmer waters. Other crustaceans sometimes called ‘lobsters’ are the foot or slipper lobster, the smaller Norwegian lobster, and the Australian Moreton Bay bug, sometimes called a bay or flat-head lobster. Lobsters are often dark blue or almost black in colour when alive and turn red when cooked.
