When buying a live lobster, make sure it’s lively and has its tail tucked under its body. The shell should be hard — a soft shell indicates it has just moulted and is not in peak condition. The shell should have no holes and the lobster should have all its limbs. When picking up a lobster, make sure its claws are taped together, then pick it up just behind the head using your finger and thumb. Don’t grasp it around its middle as it might close up on you suddenly.
