Cooked lobsters should be sweet and fresh smelling. The tail should be tightly curled (this indicates the lobster was alive when it was cooked) and spring back when you stretch it out. Discoloured meat can indicate that the lobster has been dead for too long. The meat from a cooked lobster tail can be removed in the same way as the raw tail. The claws will need to be cracked to extract the meat.
