The most humane way of handling a live lobster is to freeze it for 1–2 hours to make it lose consciousness, then plunge it into a saucepan of boiling water. If the recipe calls for live lobster to be split in two, it can still be killed by this method first, then removed from the boiling water, drained and split as the recipe directs.
