Octopus and squid are known as cephalopods — molluscs without shells. The octopus has eight tentacles and its curved and parrot-like mouth is found underneath its body along with an ink sac. Like its cousins the cuttlefish and squid, the octopus squirts out indelible black ink when threatened. While the ink sac should be removed during preparation, the ink can be used in cooking.
