Fish can be filleted either by a fishmonger or at home (you will need a filleting knife that has a sharp flexible blade). Round fish yield two fillets, one from each side of the fish. Flat fish yield four fillets, two from each side, or two larger fillets. Depending on the size of the fish, you will need one or more fillets per person. If the fillet is very large you might just need a piece per person.
