Steaming is a popular and gentle way to cook fish fillets, parcels of fish and whole fish. Use a bamboo steamer and put the fish on a piece of baking paper or a plate. If you are using flavourings such as herbs, put the herbs in the bottom of the steamer, then lay the fish on top of them. When steaming, choose pieces of fish that will hold their shape and not become too fragile. Banana leaves can also be used when steaming. Use them for wrapping the fish — they will protect it from direct heat, as well as add a subtle extra flavour. The leaves will char as they cook.
