Polenta is the name of the dish — the raw ingredient is actually cornmeal or ground corn kernels — and it is a staple of northern Italy, where it’s more widely eaten than pasta. Polenta can be served soft, sometimes mixed with cheese, and served with meat or vegetables, or it can be left to set, cut into pieces and grilled.
