Store potatoes in paper bags to allow moisture to escape and to keep light out. Keep in a cool and dry, dark, well-ventilated place to prevent them from sprouting. If exposed to light, potatoes turn green โ€” these will be bitter and indigestible and can be poisonous. Ready-washed potatoes have a shorter storage life, as washing removes their protective coating of earth. Older potatoes keep for 2 weeks or so, but new potatoes are best eaten soon after purchase.
