Cultivated mushrooms don’t need to be washed before use — simply wipe over them with paper towel. To prepare wild mushrooms, wipe them with a damp cloth or paper towel. Remove the gritty base of the stem and brush the caps with a soft brush to remove earth or grit. If necessary, quickly run them under cold water, then pat dry with a paper towel.
