Friands (pronounced free-onds) are small oval-shaped cakes, traditionally made with ground almonds, and baked in special-purpose oval tins called friand tins or barquette moulds. Sometimes the same mixture is baked in a rectangular tin and is then named Financier, meaning ‘gold ingot’, which the shape resembles. Both are very popular in cafés and come in a variety of flavours. The tins can be purchased from kitchenware shops. Friands will keep, stored in an airtight container, for up to 4 days, or frozen for up to 3 months.
