Prepare the pudding mixture and spoon it into the basin, smoothing the top. Put the foil and paper across the top of the basin, foil side up, and smooth it down the side — don’t press it onto the pudding. If you are using a metal basin, just clip on the lid. If not, tie a double piece of string around the rim of the basin. Tie the string in a knot, then, using another double piece of string, tie a handle onto the string around the basin — this will enable you to lift the pudding in and out of the water. The covering should be fairly watertight to keep the mixture dry.
