Remember, grilling and barbecuing aren’t the same thing. Grilling is cooking on a grill over a coal or gas fire until the heat penetrates the meat. Barbecuing implies long, slow cooking, usually with smoke. Authentic barbecuing is, in fact, slow braising, with the juices in the meat and the barbecue sauce that are brushed on it serving as the braising liquid.
