Broccoli and Broccoli Rabe

Other than being the same color and having the same name, broccoli and broccoli rabe are very different. Broccoli rabe has leaves and flowers and a pronounced bitter flavor that you either love or hate. Regular broccoli really only has leaves and flowers, sometimes called florets, that are green and, well, don’t look that much like flowers. Broccoli should be quickly boiled or steamed, set to dry in a colander, and then tossed with a little butter and perhaps a chopped herb. Broccoli rabe is tastiest when sautéed with garlic.
