Few main dishes are as accommodating as scrambled eggs, often the busy woman’s first choice. They are at home in all three of the daily meals—taste equally good with bacon or ham, or with such foods as cheese, tuna and corn added.
Country women frequently possess great skillet skill in scrambling eggs. They cook them—as they do all egg dishes—with low or moderate heat until done, but still moist. (Eggs keep on cooking a little even after you turn them onto a warm platter.)
