Cottage Cheese Main Dishes

Appears in
Farm Journal’s Country Cookbook

  • About
The all-star main dish featuring cottage cheese often is a salad to which it contributes valuable protein. It may be combined with canned pineapple slices or peach halves, fresh tomatoes, or several fruits or vegetables. Sometimes the choice is in a molded salad like our Cottage Cheese/Salmon Loaf. You’ll also find recipes for Lasagne Casserole and Neapolitan Lasagne in this chapter; part of their goodness comes from the cottage cheese they contain.

We are including directions for making cottage cheese; they appear in the original Farm Journal Country Cookbook. Homemade cheese does not have the same taste and texture as do commercial cheeses— it is impossible to get the same results in home kitchens as in dairies.
