Sift confectioners sugar before using it. Tiny lumps clog tube and keep it from making clear-cut designs.
Apply thin glaze to cake before frosting, to anchor crumbs. Make glaze by adding hot water to some of the frosting, about 1 tblsp. to 1 c. frosting.
To tint frosting, mix about ¼ tsp. of food color with 1 tblsp. frosting. Add small amounts of this color base to your frosting. Tint enough frosting for whole cake, as it’s difficult to match colors with another batch.
Frosting used in tube should be a little thicker or heavier than that for spreading with spatula. Just add a little sifted confectioners sugar.
It’s a good idea to practice putting designs on a piece of waxed paper, baking sheets or backs of pans.
