How to Chop Garlic with Salt

Place a peeled clove of garlic (or more, if necessary) on a flat surface and flatten garlic with the flat side of a heavy knife.
To flatten the garlic, simply press down on the knife with the heel of one hand. Sprinkle the garlic with salt and start chopping, first this way, then that way. Continue chopping until the garlic is almost a paste.
There are many people, of course, who rely on a garlic press, but it is this author’s considered opinion that the press actually alters for the worse the flavor of garlic. Garlic put through a press acquires a “metallic” taste.
