Bread crumbs are always best made with bread that is not oven-fresh, i.e., bread that is still fresh yet a few days old. The quickest way to make bread crumbs is in an electric blender. It is not necessary to trim the bread. Cut it into ½-inch cubes and blend small quantities, a cup or so at a time, on high speed. As each batch of crumbs is made, empty the blender and continue to make the desired amount. Two slices of bread will yield about ¾ cup of bread crumbs.
