Only in the dining rooms of the aristocrats and the very well-to-do would we find the kind of dinner menu that starts with an appetizer, or where an appetizer follows the soup, either instead of or in addition to a fish course. Hence there are few recipes for such preparations. However, many dishes in addition to those identified as appetizers, even vegetable preparations, can be used as appetizers in a traditional Hungarian menu.
